Sweet Corn Enchiladas and Sloppy Joes

Sloppy Joe on Challah Rolls w. Pickled Beets and Classic Cucumber Salad

• Cut the rolls in 1/2 crosswise and toast.

• Heat the joe in the microwave or on the stovetop. Serve as a sandwich or open-face.

• Serve the beets and cuke salad chilled.

Sweet Corn Enchiladas on Dirty Rice w. Roasted Tomatillo Sauce

• Heat the enchiladas and rice in the microwave until hot through. If you like turning your oven on in summer , do so and bake the dish 10 minutes more at 350 to crisp the tortilla a bit - this step is optional.

• Heat the tomatillo sauce , also in the microwave. Top the enchiladas with the sauce and serve. Some sour cream or yogurt to garnish is great.
