Sweet Corn Chili and Lacinato Kale Minestrone


Sweet Corn Chili, Tostadas, and Cilantro Rice

 

· Heat a little oil in a saute pan. When hot add the rice, toss. Allow the rice to heat through and become fragrant. You can use a lid and a little splash of water to speed the process.

· Heat the chili stovetop or in a microwave ( you can heat the rice this way too, but its better from the pan.

·  Serve the rice and chili together. We like to top with yogurt or sour cream, chopped pickled jalapeno, and then scoop it up with pieces of tostada.


Lacinato Kale Minestrone ,Whole Wheat Batard, Blue Moon Salad Greens

 

· Heat the soup.

· Warm the bread. 

· Dress the salad
