Meal 1: Open-Faced Poblanos Stuffed w. Chicken, Cheese, and Sweet Corn over Latin Rice and Adobo Black Beans

· Heat the casserole at 325 for 20-45 minutes , depending on share size, until the rice is hot and the cheese is fully melted. You can cut the bake time considerably by microwaving the dish to get the chill out. And, shameful truth be told, you can even just straight up microwave the whole thing till hot and melty and call it a go.

·  Heat the black beans in pulses in the microwave until hot, or heat in a sauce pan. Serve with the peppers and rice.

Meal 2: Equinox Stew, Challah, Green Leaf Lettuce Salad

· Heat the stew to a simmer. Simmer 2 minutes.

· Warm the bread and serve with soft butter.

·Dress the salad.
