Zuppa di Zucca and Stuffed Poblanos

Meal 1: Zuppa di Zucca, Whole Wheat Batard, Mixed Greens Salad,


· Heat the soup gently and serve when just simmering.

· Warm the bread and serve with olive oil for dipping.

· Dress and serve the salad.


Meal 2: Open-Faced Poblanos Stuffed w. Chicken Mole, Cheese, and Sweet Corn over Latin Rice Pilaf and with Black Bean Sauce


· Heat the casserole at 325 for 20-45 minutes , depending on share size, until the rice is hot and the cheese is fully melted.

·  Heat the the jar of black bean sauce in pulses in the microwave until hot, or heat in a sauce pan and reserve.

·Portion the stuffed peppers and rice onto plates and top liberally with the black bean sauce.
