Chicken and Dumplings and Enchiladas


Bean, Cheese & Green Chile Enchiladas w. Ranchero Sauce on Latin Rice w. Butternut Squash


  • Heat the enchiladas and rice in the microwave in bursts for several minutres to get this chill out. Then bake the dish for 10-20 minutes more at 350 to crisp the tortilla a bit.

  • Heat the tomatillo sauce , also in the microwave. Top the enchiladas with the sauce and serve. Some sour cream or yogurt to garnish is great.


Chicken or White Beans and Dumplings w a Romanie Salad

  • Transfer the filling to a serving dish. Microwave in bursts to heat through or just get the chill out then bake at 350 for 15-25 minutes.

  • Heat the biscuit dumplings on a cookie sheet for 10 minutes in the oven along with the veggie/ chicken mixture then top the hot casserole with the biscuits and bake 5 minutes more. Serve. If you microwave it to hot all the way do toast the dumplings in a toaster or in some butter in a pan before topping the casserole.

  • Dress the Salad.
