
Pho w. Wide Noodles and Silken Tofu or Thai Spice Meatballs
Omnivores: microwave the meatballs briefly to pre warm them. Heat your broth to just a simmer in a saucepan.
Vegetarians, carefully pour off the broth into a saucepan - leave the tofu behind in the jar for now. Microwave it briefly to get the chill out.
When just to a simmer, add the vegetables and heat through for 1 minute.
Rinse the noodles thoroughly in cold water and then either heat in a microwave briefly to get the chill out or plunge them into boiling water, then drain and transfer into bowls.
Vegetarians should add the tofu to the serving bowls now. Omnivores add the meatballs.
Ladle the hot broth and veg onto the noodles.

Heat the soup. Allow to simmer 1-2 minutes.
Warmt he bread and serve with good olive oil for dipping.
Dress the salad.
