Noodle Pancakes and Enchiladas


Sweet Corn and Cheese Enchiladas w. Refried Beans and Rice


  • Microwave the enchiladas to get the chill out , then bake at 350 for 15-20 minutes depending on share size.

  • Heat the sauce in a microwave. When the enchiladas are nearly done in the oven top with the sauce and bake 5 minutes more.

  • Heat the beans in a microwave or stovetop and serve on the side.



Buckwheat Noodle Pancakes and Miso Soup


  • Watch the video on cooking the noodle pancakes.

  • Add oil to a sauté pan - enough to coat the bottom and then a bit more. Heat over medium high until hot but not smoking. Drop a noodle in to test the temp. If it sizzles actively and jumps, you are ready.

  • Mix the noodles with their herb and sesame seed garnish. Then spoon a small ( about 2 oz) dollop into the hot oil. Flatten it out with a spatula.

  • Allow to fry about 3 minutes then carefully flip the pancake and brown the other side.

  • Drain on paper towel, cook in batches and allow to cool to just warm before serving.

  • Heat the soup to hot, but do not allow it to boil.
