Green Bean Casserole w. Fried Shallot Topping and Challah
Transfer the casserole mix to a baking or serving dish and microwave in batches to desired heat. Top with the fried shallot crisps and serve. Alternately microwave the mix just to get the cihill out then bake at 350 until hot, top and serve. But, do you really want to fire up your oven?
Warm the challah and tear or slice to serve.
Namya Curry Pho w. Chicken or Tofu and Summer Vegetables and Cucumber & Corn Salad
Heat the Pho broth to just a simmer. Add the noodles. Cook 2 minutes. Add the vegetable mix of zucchini, eggplant, cabbage, and carrot. Cook 1 minute. Serve.
NOTE: There are a lot of leaves in the pho: cilantro, Thai basil and perhaps kafir lime leaf. Discard the Kafir lime ( they are oval and tough. ) Enjoy the basil whole, like a vegetable. The cilantro should be familiar.
Turn the cucumber and corn out into a serving bowl. Toss all to combine. Serve chilled as a side salad to the pho.
