Flatbread Pizza and Split Pea Soup
Meal 1: Grilled Flatbread Pizza w. Chevre, Red Onion, and Collard Greens, Chick Peas w. Leek, Roasted Pumpkin,
· Unwrap the pizzas, place them on a baking tray and spread the shredded cheese evenly. Bake at 450 for about 10 minutes or crust is toasted an cheese is beginning to brown.
· Heat the squash on a lined baking sheet or heat them by gently sautéing in a little butter/ oil for 5-8 minutes to heat through. Using a lid can speed the process, but don't set it and forget it.
· Sauté the chick peas and leeks in a generous pour of olive oil, over medium heat, to heat through. 3-5 minutes.
Meal 2: Split Pea Soup, Whole Wheat-Flax Batard, Escarole Salad.
· Heat the soup gently.
· Warm the bread and serve with butter and a sprinkle of salt.
· Dress the salad.
