Meal 1: Flatbread Pizza w. Brussels Sprouts, Onion Jam and Homemade Bacon, Roasted Cauliflower w. Red Onions, Mixed Greens Salad
Unwrap the pizzas and arrange the cheese evenly. You may want to arrange the sprouts underneath too just to make sure they are evenly distributed.
Bake the pizzas at 425 for about 12 minutes to just brown the cheese lightly.
Heat a little butter or olive oil in a sauté pan. When just hot add the cauliflower and onion mixture. Toss to coat evenly and allow to heat through. Maybe use a lid briefly to speed the process. Season with a little salt and pepper and serve.
Dress the salad.
Meal 2: 'Tiger' Rice Bowls with Roasted Squash, Kidney Beans, Sweet Corn and Roasted Pork
Heat the pork/ bean mix in a sauce pan with a very little bit of water over medium heat. Use a lid. When simmering remove the lid and stir. Allow the mixture to heat through, break up a bit, and most of the liquid to evaporate. 5-10 minutes. Be a little patient, and do not burn the mixture.
Heat a little oil in a sauté pan. When hot add the rice. Stir and fry allowing to heat through. When hot, portion into bowls.
Reheat and oil the pan. When hot add the squash mixture. Toss then allow to heat. Use a lid to speed the process and add some butter or oil if needed. Stir or toss gently to not crush the squash.
Serve the rice topped with the pork, then the squash mixture. Enjoy!
