Cochinita Pibil Rice Bowls and Buttermilk Borscht

Cochinita Pibil w./ or Adobo Black Bean Rice Bowl w. Citrus Slaw
Heat the pork and or beans in a sauce pan with a very little bit of water and a lid over medium low. Break up the pork with a utensil at the start of heating. Allow to simmer gently 3-5 minutes with the lid on.
Heat a little oil in a sauté pan. When hot add the rice. Toss. When hot and fragrant add to the bowls.
Top the rice with the pork and or beans.
Add the slaw to a mixing bowl. Sprinkle very lightly with salt. Toss. Dress with the citrus dressing. Serve atop the pork/ beans.
Buttermilk Borscht, Seeded Rye Bread, Baby Bibb Salad
Serve the borscht chilled.
Warm the bread. We really like it cut into thick slices and pan toasted in butter.
Dress the salad.
