Cochinita Pibil Rice Bowls and Buttermilk Borscht

Cochinita Pibil w./ or Adobo Black Bean Rice Bowl w. Citrus Slaw


  • Heat the pork and or beans in a sauce pan with a very little bit of water and a lid over medium low. Break up the pork with a utensil at the start of heating. Allow to simmer gently 3-5 minutes with the lid on.

  • Heat a little oil in a sauté pan. When hot add the rice. Toss. When hot and fragrant add to the bowls.

  • Top the rice with the pork and or beans.

  • Add the slaw to a mixing bowl. Sprinkle very lightly with salt. Toss. Dress with the citrus dressing. Serve atop the pork/ beans.


Buttermilk Borscht, Seeded Rye Bread, Baby Bibb Salad

  • Serve the borscht chilled.

  • Warm the bread. We really like it cut into thick slices and pan toasted in butter.

  • Dress the salad.
