Buttermilk Borscht, Cucumber Salad, Kasha and Bowties
Stir the garnishes into the soup and serve chilled. Ajust the salt as desired.
Serve the cucumber salad chilled.
Heat a little butter in a nonstick skillet. When hot and lightly browned add the kasha and bowties. Stir. Let sit and allow the kasha to brown lightly against the pan. It will become fragrant. Toss. Allow to brown again adding butter (or oil) as needed. Serve when piping hot and fragrant.
Sweet Corn Chicken (or Beans ) and Dumplings w a Summercrisp Salad
transfer the filling to a serving dish. Microwave in bursts to heat through or just get the chill out then bake at 350 for 10-15 minutes, top with the biscuit dumplings and bake 5 minutes more. Serve. If you microwave it to hot all the way do toast the dumplings in a toaster or in some butter in a pan before topping the casserole.
Dress the Salad.
