Big Fat Springtime Burrito and Sesame Noodles w. Stir Fried Vegetables


Big Fat Burritos and Frissee Salad

  • Microwave the burritos briefly to get the chill out. You can either:

  • A). Arrange the burritos on a cookie sheet and bake at 350 for 10-15 minutes to heat through and crisp the tortilla. OR

  • B). Heat some oil or other fat over medium in a sauté pan. When hot add the burrito seam side down. Allow the tortilla to brown well. About 1 minute., Use tongs to turn the burrito to its opposite side, browning again. repeat for all 4 sides. Serve. Great topped with sour cream and salsa.

  • Dress the salad


Cold Sesame Noodles, Vegetable Stirfry, and Honey-Sesame Chicken or Tofu

  • Microwave the noodles briefly to get the chill out. Arrange on a serving platter.

  • Microwave the sesame-peanut sauce as well to just warm it. Ditto the tofu ( and chicken if you prefer, but I like it cold...)

  • Cube the tofu and chicken into 1/2" pieces.

  • Heat a little oil in a sauté pan to smoking hot. Add the vegetable mix. Stir and fry until bright and lightly softened. Season with a little salt and turn it out onto the noodles.

  • Drizzle the sauce over the vegetables and noodles. Top with the chicken or tofu. Serve.
