Tomato Soup and Red Lentils
Meal 1: Tomato Bisque, Cheese Bread, Blue Moon Mixed Greens
· Heat the soup.
· Warm the bread in the oven.
· Dress the salad.
Meal 2: Red Lentil Stew, Chick Pea Fritters, Sauteed Spinach
· Warm the stew in a sauce pan. Thin with water as necessary and adjust the seasoning.
· Heat a little oil in a sauté pan. Non-stick is great. When the oil is hot, add a few approximately 2 oz (1/4 cup) dollops of the chick pea batter to the pan. Flatten them to about 1/2" thick. You do not have to be precise on the sizing. Fry to brown the one side, 2-3 minutes. Using a thin spatula flip the fritters and fry the other side. Serve with a sprinkle of salt and a little yogurt or sour cream.
· Heat a little butter or olive oil in a sauté pan over medium. When hot add the spinach and a sprinkle of salt. Stir and allow to wilt. Serve.
