Meal 1: Three Bean Chili ( con Carne), Tex-Mex Grits, Cortido
· Heat the chili to a simmer.
· Cut the grits cakes into squares about2"x2". Pan fry the pieces in hot fat or oil - a non-stick pan is great. Brown ~about 3-4 minutes per side. Serve under the chili.
· Serve the cortido chilled on the side.
Meal 2: Lentil Soup, Whole Wheat Boule, Red and Green Oakleaf Salad
· Warm the soup gently. Allow to simmer. Serve.
· Warm the bread.
· Dress the salad.
