Meal 1: Matzoh Ball Soup, Snug Haven Spinach Salad, Coconut Macaroon
· Bring the soup to a simmer on the stovetop. Gently simmer for about 5 minutes and serve when the matzoh balls are hot through.
· Dress the salad.
· Enjoy the dessert!
Meal 2: Sephardic Meat or Cheeseball Fricassee w. Sultan's Rice
· Omnivore: Remove and reserve the meatballs. Bring the chickpea/potato/ cabbage mixture to a gentle simmer, adding a little water if necessary. Check for salt then add the meatballs to the fricassee and simmer gently 3-5 minutes.
· Vegetarian: Heat a little oil in a well seasoned of nonstick pan set over medium heat. Scoop out golf ball sized portions of the cheese mixture and firmly shape into, well, golf ball sized balls, but then pat the top and bottom to flatten a little. Pan fry these in batches to brown the top and bottom. 1-2 minutes. Be careful, they can over brown quickly. Serve atop or beside the fricassee, which is heated gently as above. · Stirfry the rice in a hot pan with a little oil or butter. Allow to brown lightly and stir to heat through and become fragrant. Serve and top with the fricassee.
