Escarole Soup and Tamales
Meal 1: Sweet Corn and Cheddar Tamales, Annatto Rice, Refried Pinto Beans
· Heat the tamales in the microwave, unwrap and serve. Alternately, unwrap them cold and pan fry over medium to medium high in a generous amount of fat or butter. Allow one side to brown. 2-3 minutes. Turn and brown the other side. Serve. If you have a ripe avocado on hand now is the time to use it!
· Heat the beans in a microwave or stovetop.
· Heat a little oil in a sauté pan. Add the rice and stir fry. Heat through and serve.
Meal 2: Escarole and White Bean Soup, Semolina-Flax Boule, Spinach Salad
· Heat the soup gently
· Warm the bread.
· Dress the salad.
