Sloppy Joes on Challah Rolls w. Baked Beans and Pan Fried Potato
Heat the sloppy joe mix on the stovetop or in a microwave ( in bursts, stirring regularly).
Split and toast the challah rolls. Serve the joe on the rolls. We prefer open-face.
Heat the beans gently on the stovetop adding the tiniest bit of water if necessary ( or to clean out the jar.) Stir. Adjust the seasoning. Serve.
Cut the potatoes into approximately 1" chunks. I do this by splitting the lengthwise in 1/2. Then splitting each 1/2 lengthwise again, then cutting crosswise into 1" pieces. Heat a little oil and or butter in a nonstick or well seasoned pan. When hot, add the potato and pan fry them to a golden brown on at least 2 faces. Abut 2 -3 minutes per face. Transfer to a plate, season with salt and pepper, and serve.
Root Vegetable Bisque, Whole Wheat Batard, Escarole Salad
Heat the soup gently, stirring well.
Warm the bread.
Dress the salad.
