Meal 1: Pulled Pork Shoulder, Roasted Sweet Potatoes and Yellow Rice Succotash
Vegetarians: remove the cheese mixture from jar and into a bowl. You will need a utensil. Add a very little bit of milk or other dairy ( or water ). Less than 1 T per share. Mix this in, then press the cheese into golf ball sized balls, and flatten them into disks about 1/2" thick.
Heat a little oil over medium in a nonstick or well seasoned pan. When hot add the cheese patties and brown them on each side. About 1-2 minutes per side. Serve atop the rice and sweet potato.
Omnivores. Briefly microwave the pork and sauce to get the chill out. Transfer to a sauce pan and heat gently. Add just a little water and lid the sauce pan. Allow to simmer very gently for 4-6 minutes. Be VERY careful to not burn the sauce and pork. Taste the sauce and add a little salt as desired. Stir and use a fork to shred the pork as coarse or fine as you like and to fold it with its sauce. Reserve.
Remove the sweet potatoes from the jar and reserve.
Heat a little butter or oil in a sauté pan. When hot add rice. Toss to dress. Add butter if necessary. Allow the rice to heat through and become fragrant. Transfer to serving bowls.
Reheat and butter the pan. Add the sweet potatoes. Toss to dress. Heat through and allow the sweet potatoes to get a little more brown and slightly crisped. Season and serve atop the rice.
Top the whole thing with the pork and serve.
Meal 2:Lentil Soup, Semolina Loaves, Blue Moon Mixed Greens
Heat the soup gently and allow to simmer 1-2 minutes.
Warm the bread.
Dress the salad.
