Meal 1: Plantain & Sweet Potato Soup, Cheddar Corn Bread, Snug Mixed Greens
· Heat soup on stovetop or microwave.
· Slice bread and toast in a pan with butter, or heat whole in a 325° oven.
· Dress the salad and serve.
Meal 2: Dal Makhani,Yellow Curry w/Kale and Paneer, Rice Pilaf
· Heat a tiny bit of in a pan, fry off the rice, set aside.
· Add more oil, cut the paneer into 3/4 inch cubes and sear in hot oil, turning once browned, add yellow curry and warm through
· Heat the Dal in a saucepan until warmed through (alternative microwave)
· Serve all together.
