Lentil Soup and Enchiladas



Meal 1: Bean and Cheese Enchiladas with Ranchero Sauce over Latin Rice, Roasted Squash and Green Chiles

· The enchiladas and rice are packed together. Microwave them briefly to get the chill out. Bake at 325° for about 20 minutes depending on share size. the cheese should melt out a bit and the edges will crisp.

· Microwave the sauce briefly to get warm. When the enchis are nearly done, top with the sauce and bake ( yes, the whole enchilada) 5 minutes more. Serve/

· Heat a little butter or olive oil in a sauté pan. Add the squash, chiles and herbs. Toss. Allow to heat through. A lid may speed the process. Add a couple drops of water if necessary. Check the seasoning and serve.

Meal 2: Lentil Soup w. Braised Cabbage and Diced Ham, Frisee Salad, Roasted Cauliflower

· Heat the soup to a gentle simmer. Serve.

· Dress the salad.

· Heat a little butter or olive oil in a sauté pan. Add the cauliflower. Toss. Allow to heat through. A lid may speed the process. Add a couple drops of water if necessary. Check the seasoning and serve.
