Chicken (of the Woods) Cacciatore and Pumpkin Florentine
Pumpkin Florentine Soup and Eggplant-Red Pepper Fougasse
Warm the fougasse (Window Bread) in the oven at 325 for 10-12 minutes. Serve warm and with a little good olive oil for dipping.
Bring the soup to just a simmer. Serve.
Chicken or Chicken of The Woods Cacciatore Over Penne, With Mixed Greens Salad
Heat the cacciatore sauce and chicken or chicken of the woods mushroom ( yes, it's orange!) in a sauce pan and allow to simmer gently.
Heat the pasta briefly in a microwave. Fold the pasta into the sauce and allow it to combine and simmer again. Serve. Garnish with a little shaved parmesan or locatelli.
Dress the salad.
