Big Fat Burrito and Potato-Spinach cakes


Big Fat Burrito w. Pork and Spinach, Latin Rice w. Pepitas


  • Microwave the burritos to get the chill out , then bake at 350 for 12- 15 minutes until the outside is crisp and the inside is hot.

  • OR heat some oil in a sauté pan over medium. When hot add the microwaved burritos seam side down. Brown for about 1 minute. Rotate to the opposite side. Borwn all 4 sides. Stove top chimichanga! Serve with yogurt, pickled jalapenos, and any other favored garnishes.

  • Heat a little oil in a pan. When hot add the rice. Stir and fry unti hot though, fragrant, and lightly toasted.


Potato & Spinach Cakes, Romaine and Escarole Salad, Baked Beans w. Homemade Bacon


  • Heat the potato cakes on a cookie sheet on the oven at 350 for 12-15 minutes.

  • Warm the beans on the stove top. Add a little water to thin them a bit. Adjust the seasoning and serve.

  • Dress the salad.
