Soba Noodle Pancakes and Red Bean Chili
Spicy Napa Cabbage Soup w. Silken Tofu and Soba Noodle Pancakes Transfer the soup to a saucepan carefully - use a spoon to guide the tofu into the pot without splashing or crumbling the tofu into tiny bits - it is delicate. Heat the soup to a simmer. Use a spoon or butter knife to cut the tofu as it floats in the soup into approximately 1" pieces. Simmer 3-5 minutes. Serve. Chicken and Dumplings and Enchiladas
Bean, Cheese & Green Chile Enchiladas w. Ranchero Sauce on Latin Rice w. Butternut Squash Heat the enchiladas and rice in the microwave in bursts for several minutres to get this chill out. Then bake the dish for 10-20 minutes more at 350 to crisp the tortilla a bit. Heat the tomatillo sauce , also in the microwave. Top the enchiladas with the sauce and serve. Sloppy Joes and French Lentil Soup
Sloppy Joe on Challah Rolls w. Baked Beans and Sweet Potato Salad Do this first. Ideally 30 minutes ahead of serving time. Turn the sweet potato salad out into a dish with a rubber spatula. Add a pinch of salt - not much though. Fold the salad ingredients carefully to dress the evenly. The sweet potato is soft and some will become part of the dressing, which is desired, but do not turn the whole thing into mush by overworking it. Serve at room temp. Cut the rolls in 1/2 c
