Reggae Country Style Fried Rice w. or w.out Chicken, Spicy Red Beans, and Curried Sweet Potato w. Collard Greens
Omnivores: Remove the chicken pieces and fry them in a non-stick or well seasoned sauté pan with a little oil. When fragrant and lightly crisped, add the rice and toss to combine.
Vegetarians: Simply heat a little oil and or butter in a saute pan. When hot add the rice and toss. Allow to heat through and brown lightly, stirring only occasionally. Serve hot.
Heat the beans on the stovetop or in a microwave. Serve on the side.
heat the sweet potato curry on the stovetop. Bring to just a simmer. Simmer 1 minute. Serve.
Falafel Croquettes, Fregola Salad, Escarole Salad
Heat the croquettes on a baking sheet at 350 for about 15 minutes. Serve when hot. Lovely with some yogurt and hot sauce.
Serve the fregola at room temp, or saute it in a pan with a little olive oil to serve hot.
Dress the salad.
