Black Bean Stew, "Dirty Rice", Cuban Pork and Sweet Potato Hash
Warm the beans stovetop or in a microwave.
Heat a little oil in a sauté pan. When hot add the rice. Toss. Allow to become hot and fragrant. Divide into bowls.
Remove the pork from the top of the jar with the hash mixture. Break it up into pieces and add it to the hot pan. Allow it to sizzle and heat. The fats will melt and the juices will too. When the meat becomes hot and starts browning a little extra, add the remaining vegetables and toss all to combine. Vegetarians, just start with some hot oil or butter in the sauté pan you used for the rice, and then add the hash mix. Use a lid and stir regularly to heat the hash through.
Serve the beans on one side of the rice bowl and the hash on the other. Make combo bites to your liking and enjoy!
Spinach Soup, Spelt-Flax Batard, Blue Moon Mixed Greens Salad
Heat the soup gently and bring to just a simmer to preserve the color.
