Big Fat Burritos and Pumpkin Minestrone
Meal 1: Big Fat Burritos & Sweet Potato Rice
· Unwrap the burrito(s) and warm briefly in a microwave to get the chill out. Next, bake in a 350° oven for 10-15 minutes until hot and the shell is toasty OR Heat a generous portion of fat in a saute pan or skillet over medium heat. When the fat is hot but not smoking, use tongs to CAREFULLY add the burritos seam side down. Allow the burritos to fry and the tortilla to get golden brown - about 2 minutes. Adjust the heat as necessary. The burrito should sizzle without scorching. Turn and repeat to brown on all 4 sides. Serve.
· Sauté the rice in a pan with a little oil or butter. Allow to heat through. Add a few drops of water if necessary to speed up and even the heating process.
Meal 2: Pumpkin Minestrone, Semolina-Millet Bread, Escarole Salad
· Heat the soup gently. Allow to simmer 1-2 minutes and serve.
· Warm the bread and serve with olive oil.
· Dress the salad.
